7. Raw Zucchini Spaghetti with Marinara Sauce
For two servings you will need 2 peeled zucchini, 3 tomatoes, 1 tablespoon of your favorite spices, a pinch of salt, 1 sweet red bell pepper, and 1 cup of sun dried tomatoes in olive oil. Using a vegetable peeler make ribbons resembling fettuccine – a type of pasta also known as spaghetti. Throw the rest of the above-mentioned ingredients into a blender. Another minute or two and your tomato sauce is ready. Top your zucchini ribbons with home-made marinara.
8. Spinach Stuffed Chicken Breast
To prepare the dish you will need 4 oz. of chicken fillet, 1 cup of spinach leaves, 1 chopped yellow onion, 1 cup of feta cheese crumbles, 1 tablespoon of olive oil, some pepper and salt. Pound the fillet, then saute onion in olive oil for 4-5 minutes, add spinach and then cheese, pepper, and salt. Wrap it all in the chicken fillet and fix the roll with a toothpick. Cook the stuffed chicken on medium heat for 8-10 minutes. Remember to turn the meat from time to time. Remove the toothpick and serve!
